The right choice of "cooking oil" in our diet was a talk with Dr. Ghufran Saeed.
“Cooking oil” is a very important and integral part of the taste of our food, especially our health. If there is no oil in the dish, then nowadays that food is not food. That is, it is very important to have oil. But there are a lot of oils available in the market. Different companies are selling oil with different things and different features and so on. Respected doctors recommend we have less oil and ghee and use standard products. But the major problem is, which product is standard, which feature is better, and which oil is right in terms of health and taste. From a common housewife to people in the food business, this is no less than a challenge. While keeping this view in mind, I talked to assistant professor Dr. Ghufran Saeed at Karachi university and tried to know which kind of oil is better for us and how we should use oil in our foods. And what mistake do we commit due to which our oil becomes poison for us? He explained to us scientifically that if we do not make this mistake and choose the right oil, we can avoid many diseases, which are deadly.
Whenever I drew people's attention to this matter, people always ask the same question, then what we should do? So now I have tried to have the answer to this question in my video, and respect Dr. Ghufran also has given answers to my questions with deep interest, that are very informational, from a common housewife to people in the food business. That’s it from my side.

Dr Azhar has a session with Chef Asad, on how to make low scale & economical moringa food supplements in Pakistan.
Pakistan's large population is a victim of malnutrition. Its biggest reason of Literacy, Poverty & Increasing population. How can one overcome such circumstances? One of the major reasons is inflation. The easiest and most economical solution is  Moringa, Moringa is the world's best food supplement. But it is difficult to use.Dr Azar Ali has found a way to make it easier to use moringa. How we can make it easier let's find out in this video








Is pure turmeric used in Pakistan? 
How to get with curcumin & without toxin poison



There is a special component in turmeric called curcumin scientists and doctors. Mark out of Analytical research has shown that raw turmeric has at least 6% curcumin (ie 500 grams of turmeric has 30-gram curcumin). But when this turmeric is dried and packed in pretty boxes to be sent to shops, the curcumin is lost and is found to be less than one percent (ie in 500 grams of turmeric, only 5 grams curcumin).
Heat and sunshine are the enemies of curcumin. When farmers harvest turmeric, they hasten to sell it to the middle man. The middle man boils the turmeric in water. The turmeric is boiled for three to four hours. Because of boiling, much curcumin is lost!

The boiled turmeric is spread on the ground to dry for 10 -15 days. Due to sun and heat, more curcumin is lost. When it dries up,  it is polished. To polish, turmeric is put in large plastic rotating drums. The drums are filled with fine gravel. When the drum has rotated the peel of turmeric comes off due to being rubbed with the gravel. This process is called "Polishing the turmeric". 

After this, the turmeric is sprayed with yellow color. The spray creates a glow in the turmeric and it does not deteriorate too quickly. Sprayed turmeric can maintain its color even for three years!
 Since turmeric is recognized by its smell and the smell is lost due to the boiling, drying, and rubbing process. Therefore some people perform an extra step on turmeric to enhance its perfume. Turmeric is laid on the ground and sacks of jute are placed on top. The animal dung is spread over them. The ammonia reacts with curcumin and increases the smell of turmeric! At this point, almost all curcumin is lost but the turmeric smells fresh. 
Turmeric export is 80 percent from India. while we are not exporting any in Pakistan. 
What is the reason? The reason is that, in our turmeric samples, a toxin called aflatoxin is found. Aflatoxin is a poison that leads to cancer and other diseases. When the turmeric is laid to dry under the sun for ten days after boiling, a web-like fungus appears on it. This produces a poison called aflatoxin in turmeric. This poison gets added to ground turmeric also.

 If we dry turmeric in such a way that we should not lose curcumin and our turmeric doesn't have aflatoxin in it, Pakistan can sell its turmeric at a high price in the world like India Is doing. 
 Engineer Dr. Mohammad Azhar Ali, from The University of Faisalabad, has made a major breakthrough in this regard, he invented a method in which the curcumin of turmeric is not lost nor is there any blending of aflatoxin, the poison.
